Pickles – a summer favorite that you can make now when the cucumbers ripen up in your garden or are plentiful in the markets.  Even better, you can make a large batch of pickles now and have them whenever you want throughout the course of the year.

Barrel Fermented Pickles

You will need:

  • Pickling cucumbers
  • Sea salt
  • Water
  • Fresh dill
  • Garlic cloves
  • Onion
  • Peppercorns
  • Grape leaves (these keep the pickles crisp)
  • Fermentation barrel or crock
